Having introduced Jean-Paul to the world of authentic Australian foods way back in the 1980s (despite his claims of discovering them while "researching" his book) I now realise that a little knowledge can be a dangerous thing.

When my company supplied his long-closed restaurant I would harvest the moths from pristine areas of our high country to ensure that the moths were indeed safe to serve and eat. The moths I gathered were snap-frozen in the bush using dry ice and transported this way back to Sydney.

What J-P is now advocating is actually foolhardy as the moths can commonly be seen flying out from sewers and drains where they have spent the daylight hours before heading out to feed in the twilight and night.

As for picking off the wings, the traditional way of eating these deliciously fat and sweet insects is to catch them by the net-full and tip the fluttering mass into hot ash. The heat kills them quickly and with a simple dusting, they are warmed through and one of the best foods, particularly with some roasted vanilla or chocolate lily tubers found at the edge of streams and bogs near the moth hunting ground.

Incidentally, the moths are sweet because they suck nectar from the snow gums and some of the moths use this energy source to help them make the trip back to central Queensland which is where they started their epic journey some months ago. On the Evinrude E-TEC DVD, you can see a 20 foot hydrodyne ski boat powered by tripple Evinrude engines pulling 48 skiers. These skiers move into formation and make 4 person high pyramids.

Most american show ski clubs have a boat which can pull more than 33 skiers and do it often. My guess the pool is so people can swim safely. For the record, the sea temperature in chile is, ... chilling cold! frozen! don't ever go there!! xi would rather swim in that then the ocean any day. i used to live in puerto rico and it was great to go swimmng in the ocean but, the worst part was the seaweed, it sticks to you and makes it hard to swim. omg how big lol wat if a masive wave comes cuz the ocean is lyk a few 100 yards from it Iwant to go there it looks fantastic any body know how much I was there in Jan 2007. Cool place. Rented a condo for $1000 US a week. I don't remember seeing any lifeguards but there were sure alot of cleaners. The water is salt water which is pumped and filtered from and back into the ocean. i think its fantastic and i would certainly want to swim in it.but i dont think i caould do even a length in it. how deep is it? wow thats wicked but its that big would you be able to get away with skinny dipping lol i have peed in it THAT POOL NICE.

This project offers the alternative of a tropical paradise in a country that doesn't have any tropics. It is wonderful and reasonably priced, both the sand and the water are heated, and the water is sparkling clean. Chile is a country that is changing rapidly and making a difference in the region, and these type of projects (and others) are just part of the process. Highly recommended! Wow! for all those people who said who don't they go in the beach, its because ever few hundred feet there are massive strong rips. For all those water lovers, who lose half of the fun being in a big body of water(sea), because of fear of sharks etc....this will do quite nicely. The water in Chile is very cold due to the Humbolt current that came from Antartica, South Pole. That's the main reason for the pool. No sharks in the zone... too cold. But they have a salt water acuarium with sharks in the bar that is located inside the piramid (that is a warm water pool under glass roof. See picture) I would like to point out about mmarchant2; that he is correct about people who don't leave positive and informed comments on this blog. I guess his INFORMED and POSITIVE comments(NON EXISTENT,) truly FRAMES himself.....ha..ha...!!! Come on guys ! What kind of questions are those about building a pool next to the Ocean. Open up a World Atlas and you will find out why. Study a little about the country Geography and Weather tyo find the answers. This is CHILE, not CHINA. BTW tsunamis are common in Asia !!!
