Innovative outlets like Bisty’s Wine Shop & Brasserie Bar, where oenophiles buy a plastic card for ¥525, grab a glass, and wander around the walls of 80 or so vintages available by the glass. Customers stick their card in the slot and pour a 20ml, 50ml or 90ml tasting of anything that piques their curiosity, then seat themselves at one of the tables and perhaps order from the limited food menu.
